Chicken and Mushroom Rice

This is a nutritious and filling meal containing carbohydrate and proteins. You will love the earthy flavor of the dish. Boil ½ cup of porcini mushrooms (dried) in 2 cups of water. Take out the mushrooms and finely chop them. Keep the remaining liquid. Now heat a large skillet over the fire and add 1tbs olive oil. Sprinkle 1cup of inch pieces of boneless chicken into the oil along with 1tsp sweet paprika, ½ tsp salt and ¼ tsp black pepper powder. Sauté chicken till it is brown and removes from pan. Now into the same pan, add 1 tbsp of olive oil and add ¾ cup of chopped onion and 8 ounces of cremini mushrooms. Add ½ tsp salt and ¼ tsp pepper powder and sauté for four minutes. Now add the porcini liquid, 3/4 cup of basmati rice, chopped porcini mushrooms and bring to a boil. Reduce the heat to low and simmer for 30 minutes or till the rice gets cooked. Now add the cooked chicken, 2 cups thawed frozen green peas and thyme. Cook for another 5-8 minutes and serve hot.

Roast Chicken with Red Potatoes and Squash

This is a healthy meal on a budget with very few ingredients. Take chicken fillet and add 1½ tbsp garlic, ½ tsp salt, 1/2 tsp pepper and ½ tsp dried sage. Place the chicken on a baking tray coated with cooking spray. In a bowl, mix 12 ounces of potatoes cut into wedges, 1 1/2 cups cubed butternut squash, 1 tbsp garlic, 1/4 tsp pepper and 1/2 tsp salt. Arrange this mix around the chicken and bake it at 4000 in a preheated oven for about 40 minutes. Egg and Bacon Tarts

This recipe has healthy and easily available ingredients like whole wheat bread, low fat milk, eggs, cheese and smoked bacon.  This comfort and economic food will be ideal for breakfast, brunch and dinner. To prepare this recipe preheat the oven to 4250. Take 8 slices of whole wheat bread and remove the crusts. Coat each side of the bread with fat or cooking spray. Press the bread slice into a muffin tin. Bake the bread for 10 minutes. Take out and allow it to cool. Reduce the oven temperature to 3500. In a bowl, mix 4 eggs and 1/2 cup low fat milk using a whisk. Add the egg mixture to the bread cups in equal quantities. Add crumbled bacon over the tarts and top it with shredded cheddar cheese. Bake the tart at 3500 for about 15 minutes or till the cheese melts. You can also add chopped green onions on the tarts, if you want to add more color and flavor to the tarts.
