INGREDIENT

  • 1 ¼ cup of unsweetened almond milk
  • 1 tablespoon of apple cider or white vinegar
  • 14/4 cup of avocado or olive oil
  • 1 tablespoon of vanilla extract
  • ½ cup of gluten free rolls of oats
  • ¼ cup maple syrup or agave nectar
  • 1 ¾ cup of flour blend (gluten-free)
  • 1 pinch of salt
  • 1 ½ teaspoon powder
  • 1 tablespoon of vanilla extract
  • 1 tablespoon of flaxseed meal
  • ½ teaspoon of cinnamon
  • ¼ chopped bananas or some other fruit
  • ¼ of vegan chocolate chips

DIRECTIONS

  1. Take a mixing bowl, add vinegar and almond milk and mix it. Allow it to rest for some to activate and curdle. Thereafter, add oil, maple syrup or agave nectar and whisk it properly. Set the bowl aside.
  2. Take another mixing bowl and add all the dry ingredients and mix them properly. Add the wet ingredients to the mix of dry ingredients till it is properly incorporated. Test the batter for flavor and sweetness. Add some vanilla extract.

  1. Let the waffle iron preheat and allow the batter to set for 10 minutes. When the waffle iron is ready, coat it using a non-stick spray and pour ½ cup of the prepared batter. Cook on the waffle iron as per the instruction of the manufacturer. Remove and place it over a baking rack in an oven with 200 degrees for keeping it warm. Don’t stack and keep in one layer to make sure that it is crisp.
  2. Serve hot on a plate with your preferred toppings such as fresh fruit, maple syrup, cinnamon powder, or chocolate chips.

NOTES – These are great toasted and frozen up as requirement. Split in half and heat it in a toaster.
