Cookie Oreo Brownie Recipe
INGREDIENTS
- 26 tablespoons unsalted butter, at room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 4 large eggs
- 4 & 1/2 teaspoons of vanilla extract
- 3 cups of all-purpose flour
- 2 teaspoon baking soda
- 2 cups semi-sweet chocolate chip
- 1 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 16 double stuffed Oreo cookies
That’s it. That’s a lot of butter but a bit of this sweet heaven once in a while is not bad. This drink is a must have during the summers, if you are a chocolate lover and at the same time looking for something cool. This is great because of the taste which the Oreo biscuit induces in it.
DIRECTION
- Preheat the oven at 350 degrees F. oil your baking container or use a tin foil to cover it so that it doesn’t get sticky. For the brownie layer, in a saucepan, melt 10 tablespoons of butter.
- Removing the heat add ¾ cup of cocoa powder, 1 cup granulated sugar and whisk. Then add half spoon of table salt, 2 eggs large and 2 teaspoons of the extract of vanilla and mix thoroughly. Set it aside to settle.
- To prepare the cookie layer, beat 16 tablespoons of butter. Both brown and granulated sugar and until it’s fluffy in an electric mixer for about 3 minutes. Add the remaining two eggs, two and a half spoon of an extract of the vanilla and ensure that they are mixed well. Add two & a half cup of flour that is all-purpose, 1 tbsp of baking soda in the batter and again mix. Fold them in chocolate chips. Let it settle.
- You can pour half of the mixture in the oiled/foiled pan or can use all the mixture at once if you have a huge gathering. If you use half of it then you can reserve the other half in the freezer where it remains fresh for up to 5 months. Just make sure the container is airtight.
- On top of the cookie mixture, add the layer of Oreo cookies. Press in lightly. Pour the brownie layer at the top. Make sure that it is spread nicely with a spatula. Do the baking for 35 minutes or until the knife/spoon comes out clean. Once baked, let it cool or serve warm. Sprinkle brown sugar at the top if you like.
TIPS
Serving it warm can get messy while cutting it into pieces, so better serve it cool.
WARNING
Make sure you check the batter from time to time while baking, lest it get burned.
