Simple and delicious meatloaf for white meat lovers. A mouthwatering meatloaf with soft and juicy flavored, glazed with tangy, sweet and spicy tomato sauce.

Ingredients:

  • ½ kg, Chicken mince               
  • ½ cup, Onion (chopped)                                  
  • 2 Tbsp. Soy Sauce                                         
  • 1/4 Cup, Olive Oil                                            
  • 1 tsp. Garlic (chopped)                                   
  • 1 tsp., Garlic Powder                                      
  • 2 Cups, Breadcrumbs                                     
  • 2 Tbsp., Thai Sweet Chili Sauce                       
  • 1 Tbsp., Mustard paste                                   
  •  2 Tbsp. Nutritional Yeast                                
  •  3 Tbsp., Tomato Paste                                              
  • 1/4 tsp., Cayenne Pepper

Tomato Glaze Ingredients:

  • 1/2 cup, Tomato Paste                                      
  • 2 Tbsp., Brown Sugar                                       
  • 1 tsp., Garlic Powder                                        
  • 1 Tbsp., Soy Sauce                                          
  • 1/2 tsp., Paprika

For Garnishing:

  • Fresh Basil
  • Fresh Coriander red, glazed with tangy, sweet and spicy tomato sauce

Instructions:

  • Preheat the oven to 375°F (190°C). Grease the loaf pan with a little bit of oil and then place butter paper over it so that the meatloaf can’t stick to the pan and can easily take out from the oven.
  • Blend chicken mince along with onion, olive oil and soya sauce in a blender or food processor until the ingredients are mixed  in a roughly texture.

  • Pour the blended mixture in another bowl and add the remaining ingredients crushed garlic, garlic powder, breadcrumbs, sweet chili sauce, mustard paste, nutritional yeast, tomato paste, and cayenne pepper.
  • Mix it well by using hands.
  • Form a loaf and place it in a baking dish.
  • Now prepare tomato glaze in a separate bowl. Mix the tomato paste, brown sugar, syrup, garlic powder, soy sauce, and paprika together and spread it over meatloaf.
  • Cover with foil and bake it for an hour.
  • Remove foil and continue baking for 15-30 minutes, until loaf is fully cooked.

  • Remove from the oven and let it cool for at least 10 minutes before removing from the tray
  • Slice and garnish it with a basil leaf or fresh coriander.

TIPS

  • Soak breadcrumbs in the milk and then add in the chicken mixture to keep the loaf moist and juicy.
