When summer comes by, you might want to veer away from baking the thick, dried fruit and wine flavored cakes to recipes that offer you lighter alternatives. Ingredients to use

  • 2 eggs, large
  • 2 tsp of vanilla extract
  • 175 gm of stoned and diced fruits
  • 140 gm of granular sugar
  • 1-2 tbsp of citrus juice, which can be of orange, lime or lemon
  • 175 gm of soft butter and extra for greasing
  • 175 gm of castor sugar
  • 250 gm of self raising flour

Method of preparation

In order to prepare the cake heat the oven to 180C beforehand to preheat. Keep a loaf tin of 2 lb capacity greased and ready. You can line its base and add on a baking parchment paper as well. Now you can turn your attention to the preparation method. Put in the flour, eggs, sugar, butter and vanilla extract in a large bowl. Beat with an electric hand mixer for duration of five minutes. By now the mixture should be thick and creamy. Once this is done, the cake mix should be spread into the tin, about one third of it. Scatter about 50 g of the fruits on top. You can then spread one third of the cake mix and add on another 50 gm of the fruits to create another layer. You can then put the rest of the cake mix on top and put on the cake in the oven. You need to bake for an hour or check with a skewer to understand whether the cake is done.

Once the cake is done, take it out and poke it all over. Place the remaining fruits in a bowl and mix with granulated sugar. Stir in about one tablespoon of lemon juice in the mixture and mash the fruits partly. Once the topping mixture is ready, spoon it all over the cake and then leave the cake to cool or for the topping to set.
