Ingredients
- ½ cup whole wheat flour
- ½ cup all purpose flour
- 1/8 teaspoon of salt
- 1 teaspoon of baking powder

- 3 ½ tbsp of softened butter (low fat)

- 2/3 cups of granulated sugar
- 3 tbsp cream cheese (fat free)
- 1/3 cup of low fat milk
- 2 tbsp almond paste
- ¼ teaspoon organic almond extract
- 1 cup of red cherries in water (pitted and drained)
- 2 tablespoons of roasted almonds (chopped)
- 1 teaspoon powdered sugar
- Cooking spray
Preparation
- Preheat the oven to 350 degrees F.
- Sieve the flours into a bowl and then add baking powder, salt and ground cloves to it. Mix them well.
- In another bowl, take 2/3 cup granulated sugar, egg, butter, cream cheese, almond paste and extract in another large bowl. Beat the mixture using a blender until they are fully blended.
- Add flour mixture and milk little by little into the sugar mixture and mix all of them using cut and fold method.
- Pour the prepared batter in a 9 inch round baking pan that is sprayed with cooking spray.
- Spread the almonds, cherries and 2 tbsp granulated sugar on the top of the batter. Bake the cake for about 45 to 50 minutes.
- Cool the cake and then remove from pan. Sift the powdered sugar over the top of this cake and serve.

Ingredients
- 2 cups of all purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 cup organic brown sugar
- ½ teaspoon of ground cinnamon
- ½ teaspoon of ground cardamom
- ½ teaspoon of salt
- 1 teaspoon vanilla extract
- 1 cup of applesauce
- 5 tbsp of low fat, softened butter
- 3 large eggs
- ¾ cup chopped dates (pitted)
- 1/3 cup of sliced almonds

Method
- First, preheat the oven to 350 degrees F.
- Take a 9 inch round baking pan and grease it with cooking spray. Keep it aside.
- Sieve 2 cups of flour, salt, baking powder, baking soda, ground cardamom and cinnamon into a large bowl.
- In another bowl, combine butter, eggs, brown sugar, vanilla extract and applesauce and blend it on medium speed till it gets neatly blended.
- Make a well in the center of flour mixture and add the liquid mixture into the dry bowl and stir till the mixture becomes moist.
- Add dates and transfer the mixture into the baking pan. Bake for 35 minutes on 350 degrees F. remove from pan and allow it to cool.
- Garnish the cake with sliced almonds and powdered sugar and serve.
