  • Reduced fat shredded mozzarella – ½ cup
  • Whole wheat sandwich thins – 4

Methods of preparation

  • Preheated oven to 400ºC
  • Lined a baking sheet with the help of aluminum foil and coated lightly with the help of cooking spray
  • Dipped one chicken cutlet into egg wash and dipped the same into panko mixture, thus coating both sides in an even manner
  • Placed the cutlet on baking sheet and repeated the same with remaining cutlets
  • Lightly sprayed tops of chicken with cooking spray and placed in an oven
  • Baked for about 25 minutes
  • Removed baking sheet from oven
  • Spooned 2 tablespoons of marinara over top of each and every cutlet

  • Handful baby spinach leaves – 2

Method of preparation

  • Preheated the oven to 375ºFahrenheit.
  • Lightly greased two 6-ounce ramekins with 1 teaspoon olive oil.
  • Lightly beaten eggs with milk in a bowl.
  • Divided mixture between prepared ramekins and transferred to the oven.
  • Baked for 15-18 minutes until the eggs get settled.
  • Nearby the end of baking time, placed a cheese slice on the bottom half of each English muffin.

  • Heated the remaining olive oil in a medium skillet over medium heat and added garlic and cooked for about 1 minute.
