Ingredients to use

  • 12 tablespoons of unsalted butter
  • 2 and half cups of flour
  • 1 tablespoon of baking powder
  • 1 tsp of salt
  • 1 and 3/4th cup of sugar
  • 2 eggs, large and 3 egg yolks
  • 1 tsp of vanilla extract
  • 1 cup of milk
  • 5 ounces of raspberries
  • 1/4th cup of raspberry preserves

How to make?

You need to start by keeping the oven preheated at 35 degree Fahrenheit. Start by buttering two pans of eight inch diameter. These pans can then be lined by using parchment paper. If you are using butter paper, dust it with flour. Start by whisking the flour along with baking powder and salt in a large bowl. This can be set aside to work on the rest of the ingredients.

Start off with the eggs and yolks. These can be beaten with the vanilla extract. The egg mixture can then be beaten and mixed with sugar and butter. After this add in milk and flour mixture. The milk can be added in order to adjust the consistency of the cake batter. The batter can then be separated into the two pans. Both pans need to be baked for about 25 minutes till the center of the cakes is uniformly baked. Both the cakes need to be cooled and turned upside down. Meanwhile, you can combine the preserves and raspberries in a bowl. Add the mixture as the uniform layer on one cake side. Leave about an inch of border on the sides. This can then be topped by the second cake.

To make the meringue the oven needs to be preheated to 450 degrees. The rack should be placed in the bottom third. The reserved egg whites with additional white of an egg need to be beaten till the mixture becomes stiff. Three fourth cup of sugar needs to be added, little at a time to this mixture. After the egg white mixture has been formed, it can be used to create frosting on the cake. There can be peaks formed with the mixture. The cake can then be put in for baking. As the oven is heated at a high temperature, it needs to be baked for about two or five minutes till the meringue becomes brown. One should ensure that the frosting does not burn. There are other ways of preparing the cake. The two layers of cake can be made from before and refrigerated. At the time of serving, the meringue can be prepared and the raspberry layer can be added. The browning should be done before serving.
