We often frown on cheese and other dish recipes that are laden with cheese. We often think of the amount of calories that cheese offers but there are healthy aspects of this ingredient as well that cannot be overlooked. There are good and healthy nutrients in cheese like protein, calcium along with zinc, phosphorous and vitamins B complex and A. This is a good combination, especially for women who usually fall short of the ideal amount of calcium content in their diet. If you are lactose intolerant, cheddar cheese is ideal for you along with Swiss cheese. These are well tolerated as the lactose content is less. There is saturated fat, but it is a healthy form of fat whose presence in moderate amounts is good for your system and your joints and organs.  The other main ingredient in this recipe is broccoli. Known as one of the super foods, it is a vegetable that is part of the cruciferous family, allowing you the benefit of certain antioxidants and fiber as well as low fat content.

This homemade soup of cheddar cheese and broccoli can be easily made and is nutritious as well.


  • 2 cans of vegetable soup mix
  • 2 cups of water
  • 6 cups of broccoli florets
  • 2 cups of milk
  • ½ tsp of ground mustard
  • 1/4th tsp of salt
  • 1/4th tsp of garlic powder
  • 1/8th tsp of pepper
  • 2 cups of Cheddar cheese


How to make?

When you are using a soup mix it is easy to get the soup done within minutes. If you wish to start fresh, have some vegetable broth to use. You could sauté a clove of garlic in a tsp of olive oil in a skillet. Add a chopped onion to it as well and then add in the broccoli. You can then add in the mustard, salt and pepper and the broth. Once the mixture starts to boil, add in the milk. When the broccoli is tender, add in the cheese. Once the cheese has melted and the soup has slightly thickened, remove from heat. Serve with crusty whole wheat bread or croutons.


If you are planning to incorporate this soup in a dinner menu, it would go well with a dish like a chicken casserole. This is a hearty dish made from boneless chicken thigh pieces that are sautéed with seasoning and garlic. Add on the chicken pieces with cooked pasta and a soup mix and layer on with broccoli and bacon strips for a delicious baked casserole. This would indeed turn the dinner into a special and delicious one that can be had with the whole family. You would be repeating certain ingredients that would add a familiar taste to the dishes.
