INGREDIENTS
Flourless Pastry Cases
- 150 g almond meal/flour
- 1 tbsp coconut flour
- 1/2 tsp ground nutmeg
- 1 egg
- 2 tbsp granulated sweetener of choice.
- 1/2 tsp ground cinnamon
Christmas Mince Pie Filling
- 1/4 tsp ground nutmeg
- 1 small apple shredded (approx. 150g)
- 2 tbsp granulated sweetener of choice.
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 55 g butter
- 75 g almond meal or grounds
- 1/4 tsp ground mixed spice
DIRECTIONS
Flourless Pastry Cases
- Mix all the ingredients in a bowl until it resembles soft pastry. Use fork or a blender. If the batter is too damp, add some almond meal/flour. If it’s too dry, pour a drop of water and mix.
- Make pastry cases. Shape the dough into a cylinder or a log with a diameter longer than the cases and cut them into circles with a desired thickness. Press each of the circles into the case, as to ensure the same form. Place these cases on the baking tray to bake at180C/350F for 10 minutes. To ensure a perfect form, remove the cases and bake for 2 minutes until light crisp golden brown.
Christmas Mince Pie Filling
- Add all the ingredients. In a saucepan melt the butter, grated apple. Mix this well. To it add cloves, nutmeg, sweetener, mixed spices etc. and mix it thoroughly. Avoid over drying. If necessary, use little water. Heat for 1-2 mins on low flame.
- Ready to serve. Remove the heat and let it cool. When cold, place the mixture in each tart case equally and serve.
NOTES – For better taste, top the tarts with brandy (to whipped cream; add sweetener, whip again and put brandy. You can change their quantity according to your liking) as per the taste.
