Ingredients to use

  • 12 links of pork sausages
  • 1 tablespoon of vegetable oil
  • 3/4th cup of diced onions
  • 1 and 1/4th teaspoon of minced garlic
  • 2 tablespoons of soup base
  • 4 cups of water
  • 2 potatoes
  • 2 cups of kale, sliced
  • 1/3rd cup of heavy cream

How to cook?

Start by preheating the oven. Maintain a temperature of 300 degree Fahrenheit. The sausage links need to be placed on a baking sheet. You need to bake them for 25 minutes till they are cooked. Slice them into half inch pieces. Meanwhile, heat oil in a saucepan and add the onions. Sauté till they become translucent. Add in garlic for flavoring. Add in the broth as well as potatoes and water. Allow the mixture to simmer for about 15 minutes. Keep the heat low. Add in cream, kale and sausages. Allow the mixture to simmer till all ingredients are cooked. Ensure that they are heated through.

Soup of Portuguese greens

  • 4 tablespoons of olive oil
  • 1 minced onion
  • 1 minced clove of garlic
  • 6 potatoes, sliced and peeled
  • 2 quarts of cold water
  • 6 ounces of linguica sausage
  • 2 and ½ teaspoons of salt
  • Black pepper, ground
  • 1 pound of kale

Place a pan over the fire and cook garlic and onions in olive oil. Add in the potatoes and stir. When sautéing is done, put more water and bring to boil. Add in potatoes till they become mushy. In a skillet, cook sausages over low heat till the fat is released. When the sausages are cooked, put them aside. Meanwhile, mash the potatoes and puree the mixture. Put it through a food processor. Stir in the sausages along with pepper and salt. Cover the mixture and simmer for about five minutes. Add in the kale and allow the same to be tender. Add in a tablespoon of olive oil. It would be a wonderful soup to have on cold or chilly evenings. The perfect accompaniment would be a thick, crusty slice of bread with the soup.
