A froth of the cooking liquid needs to be preserved. You need to weigh the ginger and take the same amount of sugar. Add in the sugar, the ginger and water and boil. The sugar syrup should start to dry up. As it begins to recrystallize, you need to remove the ginger slices and transfer to a cooling rack that is lined with parchment paper.
