Ingredients you need
- 1 lb of ground beef or ground turkey
- 1 large onion
- 1 package of ranch dressing
- 1 package of taco seasoning
- 1 can of chili beans
- 1 can of pinto beans
- 1 can of corn
- 1 can of tomatoes
How to prepare?
Once you have the ingredients ready, it is not difficult to whip up this soup within an hour. Take a frying pan and add a few tsp of olive oil; add the meat as well as the onions in the pan; sauté for some time till the meat is browned and the onions are blanched. Add in the taco seasoning as well as ranch dressing. Mix well with the meat. Add in the other ingredients. Once the tomatoes have softened, add in water to adjust the consistency. Allow to simmer for about half an hour or more.
Panera soup with cheese and broccoli
This is a contrast to the soup mentioned above. It has a creamy and cheesy texture and flavor, in contrast to the tomato and chili based flavors of the taco soup mentioned above. It is a nutritious vegetable soup to serve to guests or to save for a simple dinner recipe as well.
Ingredients to use
- 1 tbsp of butter
- Half a chopped onion
- One fourth cup of melted butter
- One fourth cup of flour
- Two cups of cream, half and half
- 2 cups of chicken stock
- 1 cup of grated carrot
- Half a pound of fresh broccoli
- One forth tsp of nutmeg
- 8 ounces of cheddar cheese
- Crusty bread
- Salt and pepper to taste
How to make?
Add butter to a skillet. When it becomes warm, toss the onions and sauté them. Once the onions are sautéed, put them aside, now add in more butter and whisk in the flour. Cook over medium heat. Stir in the cream and mix. Add in the chicken stock and allow the mixture to simmer for about twenty minutes. Now add in onions, carrots and broccoli. Lower the heat. Allow the mixture to simmer for about twenty minutes or more. Once the vegetables have cooked well, season with pepper and salt. You could opt to blend the soup or have it with the vegetables in it. Add in cheese and a pinch of nutmeg for flavor. This soup is wonderful for serving with crusty bread.
These two recipes are not too difficult to whip up. At the same time, they are nutritious and can be mini meals by themselves, when served with bread. Opt for the same as simple dinner recipes. Otherwise, they can be served as starter items for any party that you may be hosting at home.
