Indian Lamb Curry
INGREDIENTS
- 1 kg lamb (2 lbs), boneless or with bone
- ½ cup cooking oil
- 2 bay leaves
- 50gm curry paste pack
- Salt to taste
The lamb curry is a great dish to serve with rice or chapatis. Since you can get Indian curry paste pre-packed in stores now, you don’t have to worry too much. Get this done and you can enjoy a hearty meal with your friends. Cook rice beforehand.
DIRECTIONS
- Bring a bowl. Clean the lamb pieces add about four to six spoons of the curry paste and mix it well with the lamb. Mix them with your hands and coat them evenly. Keep it aside for like 30 minutes or so.
- Take a pan. Pour half of the oil and heat it for like 2 minutes at medium-low heat. Then, add the rest of the curry paste and start cooking it. Add the bay leaves. Add a tablespoon salt to it. You have to frequently keep stirring it till it turns brown slowly. You can get the fragrance by now. Keep cooking for 2 more minutes.
- Add lamb. Add the lamb pieces and continue stirring it. Reduce the frequency to once in 5 minutes and continue doing so for like 20 minutes or so. Add one more tablespoon salt. Cover the lid and add 2 large cups of water. Cook at medium heat for 30 minutes.
TIPS
Enjoy it with freshly cooked rice.

Keep checking such that water does not dry and burn the meat.
