Directions

  • Place the chicken in a pressure cooker.
  • Cut 2 carrots and 1 celery stalk into 1 inch pieces
  • Add the cut vegetables and quartered onion to the pressure cooker along with peppercorns, kosher salt and four cups of water.
  • Pressure cook in low flame for about 30 minutes.
  • Remove from flame and allow the chicken to cool by transferring to a bowl.
  • Strain the chicken broth and remove the vegetables.
  • Add strained broth again to the cooker and add remaining 1 carrot and celery to the broth and simmer for another 10 minutes.
  • Shred the cooked chicken after cooling and add to the broth.
  • When the vegetables are tender, serve the soup in bowls.

The refreshing cucumber soup

This light soup is best for summer seasons as it has a body cooling effect. This soup has very low in calorie content and hence a good option for those who want to reduce their weight. Ingredients

  • Cucumbers -2 medium sized
  • Plain yoghurt- 1/3 cup
  • Fresh mint leaves- ¼ cup
  • Cayenne pepper to taste
  • Kosher salt
  • Lime juice -1 tsp

  • Peel and roughly chop the cucumbers
  • Take a blender and add the chopped cucumber, yoghurt, lime juice, kosher salt, mint leaves and cayenne pepper. Blend the ingredients to a smooth mixture, add water if needed.
  • This soup can be served chilled after seasoning it with salt and pepper.
